Peter B. Fox

Peter is the founder of Fox Development Corporation, a real estate development firm which develops, manages and leases approximately 1,000,000 square feet of office and retail space in Champaign County, Illinois. Peter has extensive experience in the restaurant industry, owning and operating seven Wendy’s restaurants from 1978 to 1988. Peter also serves on the Jimmy John’s Franchise, Inc. Advisory Board and has a great understanding of the franchise Peter is the founder of Fox/Atkins Development, LLC, developer and manager of the University of Illinois Research Park in Champaign that offers on-campus multi-tenants commercial office and lab space for technology companies. Peter is also the Managing Member of Fox Ventures LLC, an investment firm he founded to help support local start-up companies.

Peter currently serves on the Illinois National Bank Board of Directors , Jimmy John’s Franchise, Inc. Advisory Board, Provena Health Central Illinois Region Board of Directors, University of Illinois College of Business Council, University of Illinois Chemical Sciences Leadership Council, University of Illinois College of Engineering Innovation Leadership Advisory Board, and University of Illinois Coordinating Committee for Industrial and Technology Relations Committee.

Peter holds a Bachelor of Science degree from Stanford University in Economics and Political Science. He resides in Champaign, Illinois with his wife and two children.

Daniel J. Mall

Dan is the President of Operations for Fox Jimmy John’s. In 2005, Dan was named General Manager of the Year by Jimmy John’s Franchise, Inc. Dan has extensive experience in repositioning underperforming Jimmy John’s stores and developing a market presence in both real estate and community.

Dan has worked at the Jimmy stores in Lawrence, Kansas, after which he as served as general manager of the Bloomington, Indiana stores.  He then relocated in 2003 for the acquisition of the Durham/Chapel Hill Jimmy John’s stores, positioning the company and brand for the present Carolinas development plan.

Dan holds two bachelor’s degrees from the University of Illinois at Urbana-Champaign. He resides in Chapel Hill, North Carolina.

Matthew C. Beardsley

Matt is an Operating Partner in the Bloomington, IN stores and currently Vice President of Operations of the Jimmy John’s franchise stores throughout North Carolina. Matt is exceptionally capable in managing the logistics of high volume operations.  Matt has also taken part in the operating phases of market acquisitions in North and South Carolina, training and organizing existing resources for future development. 

Matt holds a bachelor’s degree in operations from the Kelley School of Business at Indiana University.  Originally from Colorado Springs, Colorado, he now lives in Holly Springs, NC.

Victor M. Benavente

Victor is the Vice President of Operations for the company stores in Columbia and Spartanburg, South Carolina.  Victor began with Jimmy John’s while enrolled at the University of North Carolina Chapel Hill and worked his way up the structure, becoming the initial operating partner for the 2006 Columbia acquisition.  Victor is an operations specialist focusing on creating a strong baseline for the brand’s future in South Carolina.

Victor graduated the University of North Carolina in 2006 with two bachelor’s degrees.  He now lives in Columbia, SC.

David J. Cocagne

Dave was appointed Managing Director of Vermilion Development Corporation in December 2003. In that capacity, he oversees a portfolio of over 700,000 square feet of industrial real estate in Danville, Illinois, and Kokomo, Indiana. In addition, he serves as Special Assistant to the Chairman of the Board of Mervis Industries, a position in which he spearheads the firm’s governmental relations and oversees investment of the firm’s 401(k) assets. Prior to his employment at Mervis Industries, Dave served as Manager of Real Estate and Construction for Oberweis Dairy, and Director of New Development for Fox Development Corporation. Dave serves on the Danville Boys and Girls Club board of directors, the Vermilion Advantage board of directors, and the University of Illinois at Urbana Champaign Campus Alumni Advisory Board. He has served on the University of Illinois Board of Trustees, the Merit Board of the State University Civil Service System, the Campustown 2000, Inc. board of directors, and a variety of other civic boards.

Dave holds a bachelor’s degree in finance from the University of Illinois at Urbana-Champaign, and he earned the Chartered Financial Analyst designation in 2004. He is a member of the CFA Institute, the Urban Land Institute, the CCIM Institute, and a lifetime member of the National Eagle Scout Association. He resides in Danville, Illinois.

Patrick T. Fitzgerald

Pat’s extensive knowledge of real estate and corporate law has helped successfully complete multiple transactions for Pat began his legal career with Meyer Capel in 1987 as a law clerk. Pat is a memeber of the County Bar Association, Illinois State Bar Association and American Bar Association. Further, he is actively involved with the Champaign County Chamber of Commerce as well as the Champaign Kiwanis Club. Pat is a 1989 graduate of the University of Illinois College of Law where he earned a spot on the Dean's List. In 1986, he received a bachelor of arts in economics, also from the University of Illinois. He and his wife Susan, also a University of Illinois graduate and native of Champaign-Urbana, have three children.
